”My family loves this dish using Hatch fresh green chile! I pan seer boneless chicken breasts in a little olive oil infused with garlic powder. Then I layer thinly sliced Monterrey jack cheese, chopped onion, fresh roasted & peeled green chile strips (we like a mixture of medium and hot from Chile Traditions), and another layer of cheese. Garnish with a sprig of cilantro and chopped Roma tomato. Line the chicken breasts up in a baking dish and–here’s the secret ingredient– splash ½ teaspoon of tequila & a squeeze of fresh lime juice on each breast. Bake at 350 degrees for 15-20 minutes, or until fully cooked. All the alcohol cooks out, but the flavor remains and makes a great sauce. Awesome!” –Maria A.
